Abstract
Moisture movement in product is analyzed during vacuum cooling based on elementary principles and concepts. A model of moisture movement is presented. Variation histories of mass loss and moisture content are achieved by numerical simulation. It is found that the numerical results agree with the published experimental data well, which indicates that the moisture content and mass loss of product are predicated by the mathematical model.
